    That’s medium rare.

    Mostly pink with a slight red center.

    They got it right.

    Admittedly I work at a high end steakhouse, so that looks like a med rare to me. But when someone orders a temp I explain what ours is – I’ll say “ours is a warm red center” and then we go from there.

    People need to start bringing thermometers to restaurants so they can verify their steak is 131 degrees and not 129… This is at lower end of medium rare but in the range of what I would expect for medium rare.

    I like flemings. I usually ask for more on the rare side. They can always throw it on the grill one more minute.
