I’ve been depressed for the last several months since my dog got diagnosed and ultimately passed from cancer. I was also struggling through my last semester of college and trying to hold my job. But now school is over, I’m working just enough hours to get by, and I’m finally taking the time and energy to make myself some food. So no it isn’t from scratch, and it isn’t the healthiest options, but I’m tired of eating out or living on snacks, so it’s still a step up. Cost and time are a priority, so everything was on sale, and all of this plus yogurt, brownie mix, (yogurt and brownies will be going in the empty slots), hummus, kombucha, coffee, and a bag of nerds gummy clusters lol, came out to about $50 and took about an hour to make. Caesar salad (undressed until I eat it) with “pizza croutons,” smoked sausages with sauerkraut and cheesy mashed potatoes, and bay scallops with lemony angel hair pasta and broccoli.

    I think this looks great, so good on you for spending the time and energy to nourish yourself! Not every meal prep has to be completely from scratch and you get an extra pat on the back for including some greens. We do what we can with the time and resources we have. Nice job op!

    Nice prep! If you’re anything like me, the process & modularity of meal prep are a happy place.

    Giving yourself routines, maintaining a meal schedule & keeping your blood sugar stable may not technically be a cure, but it sure can’t hurt the emotional aspect. Hang in there & keep taking good care of yourself!

    This looks great! I’m so sorry to hear about your dog. Sounds like you’ve had a difficult hole to crawl out of. Don’t worry about how easy or complex your prep is. Make what you fancy, what’s easy, whatever!

  7. This is inspiring, honestly. I’m trying to cut down on fast food and get into prep myself. That lemony angel hair pasta with bay scallops looks bomb. I’d go to town on that.

    Great job!!

    Today I found myself dreading meal prep, but I reminded myself that in 2 hours I’ll have 20 meals. It’s become a “fun” time for me as I png getting creative with random items I have in my pantry/fridge/freezer that I need to use. I will have to pivot in the summer months as it is way too hot to have the oven and the stove going.

    This is a great start and I can’t wait to see what else you come up with. I hope you’re doing well.

  11. I laughed when I saw the pizza, when I opened the post I went looking for the reason. I like it. I usually have a pizza with a side salad for non-mealprep cheat day. So This is a nice variant of that.

    the fact that you made this is fantastic. you should be so proud of yourself, OP. making food is hard in and of itself not including having mental health issues. eat it and enjoy what you’ve done for yourself 🙂
