    I dig this style of hand roll; keeps most of the nori nice and crisp.

    Yes, they usually finish rolling it but i guess they leave it open for pics/presentation

    This is so stupid whats up with this presentation? Way too much filling to be able to handle it properly, almost any guest wont be able to roll it into a maki correctly, especially without a makisu. This is just going to be messy to eat. I get they wanted the nori to stay crispy but thats what temaki are for, the chef makes it and hands it to you while its still crispy.
