Hello everyone, welcome to this new foodTour of recipes, I hope everyone is doing well, today we are heading to Spain, and I offer you the recipe for Crema Catalana, which is a dessert from Catalonia. Here are the ingredients: we will need 500 ml of whole milk, 5 egg yolks 70g of sugar 20g of cornstarch 1 teaspoon of cinnamon 1 lemon zest 20g of brown cane sugar First step, in the saucepan, add the cinnamon to the milk, then the lemon zest Heat over low heat until simmering, especially do not let it boil. Step 3, remove from heat and let it infuse for about ten minutes to flavor the milk well. In a salad bowl, add the sugar and egg yolks. Then whisk until you get a frothy mixture. So here I made a mistake in the step, I reversed it by adding the milk first, but in fact it was necessary to add the cornstarch, so be careful ;). So as you can see, I add the cornstarch right after. In the end, the result is the same. step 8, pour the mixture back into the saucepan, and heat over medium heat, stirring constantly with a wooden spatula. step 9, let it cook until thickened for about 5 to 7 minutes, the cream should coat the spatula. Before pouring your mixture into the ramekins, you can sprinkle sugar on the bottom of the ramekins, and pour up to half or three-quarters, it depends on your quantity. step 12, just before serving, sprinkle sugar on top of each ramekin with brown sugar. You can caramelize with a kitchen blowtorch or under the grill of a very hot oven until you get a golden and crispy crust. Here is the result after a few minutes, I think it should have been more caramelized than that, in my opinion with the blowtorch it would have been easier to do it for this type of dessert.
