Greek Style Summer Salad

3 tomatoes done in a medium chop
1 whole English cucumber
1 very small red onion sliced in half moons
the green part of the green onions (I used 3)
1/2 a sweet orange pepper chopped
1/2 a sweet red pepper chopped
5 ounces of Greek feta cheese crumbled
1 and 1/2 tablespoons of dried oregano
1/4 cup of chopped fresh dill
sliced olives (as many as you like) Kalamata olives are best though
2 tablespoons of olive oil
juice of 1/2 a lemon

Begin by chopping all vegetables as shown in the video. Separate the red onion slices so they are not all attached. Add the juice of 1/2 a lemon. My lemon was large and juicy. On a cutting board, crumble the fetta and then mash it with a fork well. Add the oregano and dill, along with the olive oil. Mash well again and add to the bowl. Mix to ensure that the lemon juice blends with all ingredients. Add sliced olives and serve with your favorite bread or toasted bread.

This is a really great salad and goes well with any meal you serve or alone with your favorite protein and bread.
