Hogweed is much nicer than it sounds and can be found on most country lanes, but does take a little skill to correctly identify as it's quite variable in form and colour, but has a delicious aromatic flavour. It's all sitting on a bechamel I whipped up (well my girlfriend took over so I could do other parts of the dinner. Baked at about 190 for 20 minutes before putting the chopped pancetta on with grated parmesan and black pepper. Salad is from our garden: rocket, mizuna and wild 'fat hen' that was growing in the salad patch and I quite like it so I took some of that too.

Made the Mirabelle wine last autumn so it's nine months. 14% so pretty potent. It's been made with malt too, which provides body.
