Marinade Recipe:
-Lemons
-Red onions
-Sea Salt
-Peppercorns
-Oregano
-Soy Sauce (regular, not low sodium)
-Olive oil
-Chicken
Another marinade for you guys today. It’s a Greek grill inspired chicken souvlaki marinade.
We start by slicing lemons into large slices and putting them into the pot. I cut off the ends because the lemon skins add more bitterness to the mix. Alternatively You can also juice the lemons and just put in the lemon juice.
Next we cut up the onions into larger chunks to add to the marinade pot. You can make these onion chunks a lot larger to also grill alongside the meat as kabobs.
We will add the chicken thighs or you can use chicken breasts instead. Whenever lemons are involved I usually use chicken rather than beef or lamb as I think it pairs better in my opinion. You can also cut the meat into smaller chunks if making kabobs.
Oregano, sea salt, and peppercorns go in next. Control the flavors to your personal liking. My oregano wasn’t very strong so I put quite a large amount in.
Make sure your soy sauce is the regular one and not the low sodium as the sodium is what helps tenderize the meat.
Finally add in your olive oil and I usually opt for the stronger tasting one for my marinades instead of the extra virgin ones.
Let this marinade sit in the fridge for at least 24 hours before putting it on a grill of your choice.
