Prepared fresh rosemary garlic thyme lamb chops for overnight marinating

  1. The rack of lamb came frenched but I still trimmed & cleaned it up. Separated into two chop lollipops.

    Here’s the **marinade recipe, per rack**

    * 3 tbsp and 1 tsp coarse chopped fresh rosemary
    * 3 tbsp and 2 tsp coarse chopped fresh thyme
    * 10 cloves garlic, minced
    * Salt (good pinch/dash)
    * 1 tbsp freshly ground 4 peppercorn grind (1.5 tsp fresh black peppercorn) 
    * 6-8 tbsp extra virgin olive oil (or more to preference… start with less & add as wanted)

    Marinade overnight.
