I did reverse on small smoker egg for five minutes on each side like 230°F to 280°F. Then I let it rest til the egg got to 450°F to 500°F for grilling/searing.

  1. Professional quality. I wish I were there to try a piece. Make sure you have an ample supply of finishing salts, including Malden sea salt, maybe even some truffle salt. I bet it was really tasty!
