To say if the 2 hour wait was worth it – A definite yes.
The broth is out of this world, I can’t explain how a broth can be so transparent but yet so flavorful and balanced.
The “rabiori” filled with truffle and foie gras- such a crazy addition, pillowy soft and so rich and savory.
The noodles- perfectly bouncy chewy and light
Chashu- a thick hefty piece is given but it’s cooked to perfection and contains just the right amount of fat it’s scorched in the oven right before it’s served

Love Ginza Hachigou so much. Every time I go to Japan, I brave the line. I feel like being able to get a reservation is just a myth at this point.
In my top 3 bowls of ramen in Tokyo for sure. I also did the same thing as you did and just lined up super early. I was one of the first 5 customers that day lol. Wish I can experience it again, I was recovering from a bad sickness and couldn’t fully enjoy the bowl, but it was still very good and left a great impression on me. Too bad the place doesn’t have a Michelin star anymore, they still had 1 when I went in 2023.
