Something went wrong here… The last two batches cracked. Could it have gone wrong in the oven?

  • The meringue was beaten stiff

  • I set the oven to 175°C (347°F), but my oven thermometer reads 155°C (311°F)

  • After baking, I let them dry for 7 minutes at 80°C (176°F) with the door slightly open

  • They started cracking after about 2 minutes

  • The tray was placed in the middle of the oven

  • Convection setting

I have some batter left to try some other settings. What to do?

  1. I would lower the oven temperature to 140 to bake them and also let them dry for a bit longer. Maybe 10-12 minutes.

    Crush them roughly and mix them in ice cream. Sorry for your loss.

    It had to be:

    ⁠BEFORE baking, I let them dry for 7 minutes at 80°C (176°F) with the door slightly open

    way too hot in oven. i never go beyond 300
