No meal in Morocco is served without a side of khobz. The signature Moroccan bread is eaten for breakfast, lunch, and dinner, but the best part about khobz is how it’s made: wood-fired in communal ovens nestled in the medina.

We returned to Fes, Morocco to visit these hidden public bakeries, meet the bakers responsible for the city’s bread supply, and enlist the help of locals to make our own khobz for a traditional Moroccan meal.
