To be fair towards the end, you had to use 3 to 4 times the amount the recipe called for to get the same effects

Technically, they’re arils and not berries. Junipers are a gymnosperm and don’t produce fruit, it’s a modified cone that looks like a berry. The cone is much older than the berry

Oh boy. Ok, so you should definitely label when you use these because they can be a surprising allergen, and one I don’t think to name when I’m dining out.
Folks from Austin, Texas get a winter affliction we call “cedar fever” and it’s because of the huge number of Ashe Juniper trees that grow within city limits. A lot of folks who live here have become allergic to all juniper trees as a result of living here in the winter time.
I have to be picky about which gins I can drink because many use real juniper extract.
(Yes, we know that juniper isn’t cedar but that’s what the locals have always called it.)

Do juniper berries lose their flavor over time? We had a jar of red pepper flakes that were on the shelf for god knows how long. When a new chef came on board he tasted them and said that they tasted like dust lol

Every few years I take the collection of unloved spice containers for a little trip to the spa (pre-rinse sprayer) and give them a little wash.
