You will need one large eggplant, three medium tomatoes or one can of chopped tomatoes, two to three cloves of garlic, a small handful of coriander or cilantro, a small handful of parsley, one heaped tablespoon of smoked paprika, one tablespoon of ground cumin, the juice of half a lemon, olive oil, salt, and pepper to taste.
