We are cooking a quick and delicious seafood recipe that you can cook in under 30 minutes. Our ITALIAN-STYLE COD FISH recipe simmers cod fish fillets in white wine and garnishes the fish in a homemade tomato sauce that has capers and black olives. This is an extremely healthy recipe that is perfect to serve for lunch or dinner.

ITALIAN-STYLE COD FISH
nonstick spray
1 (14.5-ounce) can fire roasted diced tomatoes
1 large clove garlic, finely chopped
2 Tbsp sun-dried tomato paste (see NOTES)
1 (or 2) star anise
salt, to taste
freshly ground black pepper, to taste
1 Tbsp capers, drained
1/3 cup black olives, pitted
4 cod fillets (about 6-ounces each)
2/3 cup dry white wine
1 bay leaf
1/4 tsp black peppercorns
thin strips of lemon rind, to taste
serve on a bed of lettuce

1. Place a pot over medium-low heat and spray it with nonstick spray. Add canned tomatoes with juice, garlic, tomato paste, star anise, salt, pepper, capers and olives. Gently heat, stirring occasionally.
2. While sauce heats, cook cod fillets. Place a skillet over medium heat. Pour in wine. Add bay leaf, peppercorns and lemon rind. Bring to a boil and reduce to simmer. Place cod fillets into skillet in a single layer. Spoon sauce over cod. Cover and simmer 6 – 10 minutes (or until the fish is tender), turning halfway through.
3. Place lettuce on a serving dish. Place cod on and/or alongside lettuce. Strain skillet cooking liquid into tomato mixture. Bring to a boil and cook until slightly reduced and thickened, 2- 3 minutes. Remove dried star anise. Spoon sauce over fish and lettuce. Serve immediately.

NOTES
1. To make sun-dried tomato paste: Place a jar of sun-dried tomatoes in oil into a blender. Puree until fully combined.
