It's not past its expiration date and looks like that after opening the package. Does anyone know what this is?

It is normal when sliced prosciutto gets older even inside the sealed box. It is still good to eat. I think that a lot has to do with the aging of the prosciutto before slicing. I have seen on other cold cuts too.

Normal, normal. Actually, I personally like that part because, being slightly oxidized, it has a slightly firmer texture and a more intense flavor.

Plain simple oxidation, completely fine if you are consuming it within expiration.
