[Music] Welcome to yet another what I eat in a day. Some days are slightly warmer now and some days are not. This morning it was. So, I wanted to make a smoothie bowl. My standard smoothie base is one banana and some frozen mango. This day, I felt like adding frozen kale as well, which I don’t always do. I also added some ground flax seeds and anti-inflammatory spices like turmeric, cinnamon, and ginger. And then just a pinch of black pepper to make the beneficial compounds more bioavailable. I find it so difficult to make a green smoothie when wild blueberries exist. They are so healthy and smoothies are a great way to incorporate them. So, I mean, how could I resist adding them? I guess it would only be possible if I craved a different flavor for a change. I’m actually trying to develop a recipe for a grain-free, proteinrich granola. The first try got kind of burnt though, so yeah. But the taste is there. I just need to figure out the cooking time and stuff like that before I can share a recipe. Um, and I just try to pick out the least burnt parts and top this money with them. Then I had some Danish rye bread from a bakery, so I wanted a piece of that as well. And I just mashed about a quarter of an avocado on top. And then I sprinkled herb salt on top of that. I honestly think they forgot to add salt to the bread because it didn’t taste as much as it should. [Music] [Music] [Music] [Music] Then I had some green tea. [Music] I had a leftover stew for lunch. It was from a Pinterest recipe. I actually have been making a lot of recipes from Pinterest lately. I can link this one below, but it contained sweet potato, lentils, and chickpeas. It was really good, although I’m still getting used to cinnamon and more savory dishes. It’s not entirely my thing. At least not yet. But as I said, it was still really [Music] good. I topped it with half an avocado for healthy fats because I don’t think I included any oil when cooking the stew. And I tried to balance out my meals with healthy carbs, fats, and protein. [Music] [Music] I had raisins covered in dark chocolate in the afternoon and I posted a real on my Instagram for how I made them. It’s super simple, but I’ll link it below. They are so freaking good. I wanted to make something simple for dinner and I craved something fresh and healthy. So, I decided to make kind of like a rice and beans curry stir fry. And I added avocado oil to a pan. I always recommend people to cook with avocado oil because it has a higher smoke point than olive oil. It’s better to use olive oil for salad dressings and things you eat cold. But then, as you can see, I added red onion and garlic and sauteed it until the onion was translucent. I also cooked my rice on the side. I chose oat rice and cooked it with herb salt. I also added some frozen kale to the pan cuz, as I said, I was craving something fresh, and kale is very fresh. Then added in a can of black beans for protein. [Music] When the rice was done, I added that as well. [Music] [Music] Then I added spices. Curry powder, turmeric powder, and black pepper. And I think I started with a teaspoon of curry powder and half a teaspoon ground turmeric. But I increased it later when it wasn’t as yellow as I wanted it to be. Because I added herb salt to the oat rice and because curry powder and garlic are flavorful on their own, I don’t think I added any extra salt to this dish. But yeah, I just uh lightly let this cook until everything was evenly combined. [Music] I topped this with avocado as well. [Music] [Music] after filming that little footage. I almost forgot I had red cabbage in the fridge, which is also super fresh. And it’s so crispy, and the crispiness paired so well with this dish. It was exactly what I was craving. So, I really enjoyed this dinner. But that was all I ate this day. Thank you for watching. Don’t forget to like this video and subscribe to see more videos like this
