We have a Pope! In honor of our new Holy Father, Leo XIV, our Catholic cooking this month is a salute to all the Pope Leos down through the ages. We’re cooking today from a fun Catholic cookbook called : “Buon Appetito, Your Holiness”, which has recipes for a variety of pontiffs, including several Leos. We’re also trying out a tasty modern recipe that is reportedly a favorite of our new Holy Father, plus we’re making a dish that has come down through the centuries as perfect for the Easter season (we’re still celebrating here!). No matter which Leo is your favorite, we’ve got you covered today in the kitchen.

Welcome to our Catholic cooking for May, the Pope Leo edition. So, as you know, every month we try different new to us Catholic recipes from different cookbooks. And this month, since we have a new pope elected, we’re going to be having some fun with some different Pope Leo recipes. And we are going to go right down the Pope Leo line starting with a recipe in honor of Pope Leo I also known as Leo the Great. So for him we are making Italian stratacella soup. I really hope I’m saying that right. I don’t speak Italian. The recipe is from the Sirius Eats blog and it’s also called Italian Easter soup which is very fitting since we’re still in the Easter season. Next, we’re going to be revisiting this cookbook, Bonapatito, Your Holiness. And this had several Pope Leo inspired recipes, but we’re going to be trying the Soul Amandine for Pope Leo I 13th. And then finally, in honor of our new Pope Leo I 14th, we are going to try a recipe for Portillo’s chocolate cake, which evidently this is his favorite dessert recipe ever. So, we are going to give it a try. We’re starting with a chocolate cake recipe from Portillos’s, which is a famous restaurant in Chicago, but one that we have never heard of because we live in the south. But we did read that Pop Leo loves this cake. We also have a birthday here this week, so it works out. And it was really interesting and fun to research a recipe for this cake online because everyone just seems to love it. And yet this these are the ingredients. But we did find testimonies from former employees, several of them online who said, “Yep, this is how we did it.” So, we’re going to try the recipe as it is. You can buy a chocolate cake kit from the restaurant’s website, but that is about $60. So, clearly, we did not do that. We’re just going to trust the internet. So, to make this one, you’re going to need a chocolate cake mix, chocolate frosting, mayonnaise, eggs, and water. We combined the cake mix with the [Music] eggs, then added in the mayonnaise and the water, and just mix those all together. Then put those in our greased cake pans. [Music] And then just let those bake. And we had some trouble getting them out. Part of the top on that one was ruined. And this one cracked when we transferred it. But we covered everything with frosting and it was all fine. Now we’re on to the Italian Easter soup in honor of Pope Leo the Great. Now, Pope Theo the Great lived in the 400s, so we can’t actually verify if he ever ate this soup, but we did some research and it is fairly plausible that he did. It’s a very simple soup, which we’re all for that. And it does have two of our favorite ingredients in it, eggs and parmesan cheese. And eggs are also a traditional Easter food. And this one is used as a kind of a starter soup for Easter dinner. Back in the day, eggs were not eaten at all during Lent. So having a soup with eggs would have been a real treat. So to make it, you have four things. You need the eggs, the parmesan, chicken broth, and nutmeg. So we first heated up the chicken broth, and then cracked the eggs into a separate bowl and beat those together. [Music] Then we added in the Parmesan cheese and the nutmeg and mixed that up. Then we slowly whisked that into the hot broth and let it cook for about 3 to 4 minutes. And then we dished it up into our bowls and topped it with more Parmesan cheese. Now we’re up to the soul almond in honor of Pope Leo I 13th and the recipe is from this book Juan Aatito your holiness which has all different papal recipes in it. We’ve cooked from this one before. We made the risoto in honor of Pis the 9th and it was very good and a lot of the Leo recipes in this book were very interesting. For example, for Leo the 10th, there was peacock in its feathers, which we didn’t try for pretty obvious reasons, but we looked it up, and evidently, you can definitely go kill a peacock and eat it, but we’re just not going to do that. There was another one, chicken alo, which looked very good, but had a lot of ingredients and a lot of complicated steps that we didn’t feel like dealing with. And a lot of the ingredients we don’t already have. And so, we always like a good fish dish. said, “We’re going with the fish.” So, to make it, you’re going to need the fish, almonds, flour, oil, lemon juice, salt and pepper, and butter. So, we washed and dried the fish and added some salt and pepper and then dredged each piece in flour. And we put those into the oil in our frying pan and let them cook. Then we added some lemon juice over top and took them out. Then melted some butter in the same pan and used that to cook the almonds. We cooked those till golden brown and also added some salt and pepper as well. Then we topped the fish with the almonds. The recipe says to serve immediately. So, we are going to go ahead and try this while our cake is still baking. Wow, that’s good. Wow. So, we read that you could dress this up by adding spinach or meatballs. All very good ideas, but we like it just the way it is. As good as it is. Um, it could work as a lenton soup as well. Funny that they didn’t use eggs back then, but we can use eggs now. So, it wouldn’t work for like a light Lenton soup. Not for you, Pope Leo the Great, but for us, it would definitely work. Well, the almonds went from golden brown to almost burnt very quickly. So, watch out for that if you try this recipe. But it does look good. We’ll see. Very good. I don’t know if we are exactly Vatican quality cooks here. Of course, we’re not. But, you know, it does taste good. One thing for sure, the almonds have a nice crunch. It’s good. I would do it again. It was pretty easy. So, here it is. It was a little rocky, you know, getting it out of the pan and everything, but it’s still a cake. Looks delicious. The recipe calls for two cans of frosting, but we’re frosting minimalists here, so we just went with one. We went with one and it did the job. We’re not trying to make Pinterest here. So, yeah. Good thing Pope Leo is a humble man because our Good thing he’s never going to see this. We wouldn’t serve this at his inaugural reception. That’s all I’m saying. Good thing no one else was. And it comes with that precut line. Okay. My word, it does look rich and gooey. Oh gosh. It’s fine. It’s a blob of cake. Yeah. Okay. Well, now that looks a little better, right? Okay. So, but how will it taste? It did smell so good, you know. But any chocolate cake is going to smell good, right? Okay. Taste test time. It is pretty darn chocolatey for sure. Mhm. It’s good though. It is very good. Very good. If you need a really good yummy birthday cake and you want to look like you tried really hard, this could fit the bill for you for sure. I don’t know what effect the mayonnaise has in this cake, but makes it very, very moist. There’s something in there. It’s always a good day in the kitchen when everything turns out. So, that was good. But now we have to decide what was our favorite. We might disagree on this. I don’t know. I like the soup the most. Yes, me too. I also like the soup because it was very quick and easy. A win. But really, really good. Really good. It was also not um something you would really think of for soup automatically putting egg in chicken broth. Well, that’s egg drop soup, but but I don’t know. The secret ingredient being the Parmesan cheese elevates it. Yes. So if you came home from work and you just did not know like what am I going to make for dinner tonight? You make this soup. It’s ready in 10 minutes and your family is going to love you. So yeah, I think the Italian Easter soup for the win. Then in second place, the chocolate cake was also very good, but never having been to the restaurant to compare it. It’s hard to say if it was restaurant. Well, obviously ours wasn’t restaurant quality, but it never is, right? But if you’ve been to that restaurant, let us know in the comments. How do you think ours looked anyway in comparison? Comparison. Okay, popping in future me to report back on the consensus on the cake. This is not even 24 hours later and this is all that we have left. We did decorate it with some leftover slivered almonds just to make it look a little bit more festive for the birthday. And the birthday boy loved it. I wasn’t home when he had his first taste, but when I got home, I said, “Oh, you tasted it. How did you?” And he said, “It was fantastic. It was the best cake I ever had.” So, I do have to say after it sat for a couple of hours, it was even better. So, definitely Popio’s cake is a big winner. The fish was also good. Um, maybe probably never going to be a go-to recipe, but it was fun to try it, right? The price of fish is crazy where we live and we live near the ocean, so I don’t know why it’s so expensive, but there you have it. Here we are. Here we are. So anyway, this is also a really fun cookbook because it tells you stories about all the different popes and I’m so glad that we got to revisit it today.   1. Today i had been watching your 2024 Catholic cooking videos, catching up and lo and behold your new one came out. I loved this one it was so interesting a subject, lots of Pope Leo recipes. I loved this video. My favorite recipe was the chocolate cake. Im a serious lover all things chocolate.

  2. I would love to think that Pope Leo would actually get to watch this wonderful video 🤗. Cake mixes aren't as popular on this side of the pond but that cake looks worth trying one and the soup definitely looks like a must try! in the near future.

  4. Oh these all looked so good! And what an awesome way to honor our new pope. I'd be all over all three dishes. Just so Yum! I've been looking for ways to use up eggs. My daughter moved to the big city & my sister & her son moved to the hub village. Earlier this month, I came back from the big city w/ a 60count pack of eggs since eggs are over $13 a dozen here in the village. I make a potsticker soup without the potstickers & add in 5 beaten eggs at the end. I'll have to try your soup recipe as the addition of parmesan sounds just so yummy.
