Used:
• 1 wedge Laughing Cow (20 cal)
• 3 tsp cottage cheese (Daisy, 4%)
• Salt, pepper, garlic powder
• Blended with immersion blender

That’s it. It came out fluffy and stayed that way. No puddle, no soup vibes. I’ve been messing with mashed cauliflower for years and this is the first time it felt close to that filling volume texture. Pretty sure the Laughing Cow made the difference. Is it mashed potatoes? No. Is it tough to beat at 150 calories. Probably. But it’s a great side to the steak I’m about to eat.

    for a touch of potato-like sweetness + filling and also so you don’t have to wring out or worry too much about the liquid i recommend adding and mixing in 2 tsp of coconut flour. That stuff expands like crazy and is VERY low calorie. 1/4 cup of it equals 1 cup of regular flour so definitely stay conservative.
