▎Recipe: Vongole Clams with Ptitim (Israeli Couscous)
▎Ingredients:
For the clams:
• Vongole clams
• Salt
• Garlic
• Shallots
• Olive oil
• Parsley
• Thyme
• Dried red pepper
• White wine
For the pasta:
• Ptitim (Israeli couscous)
• Tomato paste
• Finely chopped parsley
• Green parsley oil
▎Instructions:
1. Soak the clams in salted water to remove any sand.
2. In a pan, heat olive oil and sauté the chopped shallots and garlic along with tied parsley and thyme (using kitchen twine). Add spices and the clams, sautéing briefly. Pour in white wine and simmer until the clams open. Once done, transfer them to a bowl.
3. In the same cooking liquid, add tomato paste and ptitim (adding more water as needed). Cook until the ptitim is tender, then mix in the clams and chopped parsley.
4. Before serving, drizzle with parsley oil for added flavor.
