i’m really happy how my third loaf turned out i think i nailed it, ive made two more since then and they have come out similar! let me know if their is anything i need to work on!
ingredients:
400 grams bread flour, 50 grams rye and whole wheat flour, 12 grams salt, 50 grams starter.
steps:
mixer for 5-10 minutes let rest for 30 minutes then do another 5 minutes in mixer. After that check if it had enough gluten development if not then either stretch and fold or back in mixer for a few more minutes, let sit for 4 hours (depending on how your starter is and temperature). and pre shape, let sit for 30 minute the final shape!
