I have been making this pea pesto brusqueta for years and years. And fun fact, when I used to do a morning cooking segment for my local Fox News station, the host said this was the best brusqueta he’s ever had in his entire life. Seriously, he could not stop eating it on live TV. And to this day, people still tell me it’s the best brusqueta ever. Once you’ve made your tomato topping, set that aside. Then prepare the pea pesto. Add the ingredients to a food processor. Pulse until smooth. Then taste and adjust seasonings if necessary. Drizzle your bread with a generous portion of olive oil. Then grill it until it’s nice and toasty. And while it’s still warm, rub the grilled side of bread with garlic. It should melt right in like butter. Smear on some pea pesto. Spoon on the tomato topping. Finish with balsamic glaze and basil. And enjoy. It’s the perfect summer dish. The full recipe will be linked in my bio or caption below.

  1. This reminded me why it's sooooo important to not assume you know ingredients in things! I'm deathly allergic to peas 🫛 but wouldn't expect them in pesto.. but… expect the unexpected!!! 🫣😬🤪
