My ovens stopped working, my back hurts & I’m nursing a broken heart.
A quick choc cake was needed. Sadly, my first attempt at an air fryer cake failed & I ended up with this brownie cake hybrid concoction.

* 120g plain flour. * 50g cocoa powder. * 150g granulated sugar. * Half a tsp of salt. * 1.5tsp of baking soda. * Half a tsp of baking powder. * 1/4 cup of vegetable oil. * 1 egg. * Half a cup warm coffee or warm water. * Half a cup warm milk (buttermilk or add a splash of lemon juice or white vinegar to the milk) * Half a tsp of vanilla extract.
“Directions” ✨
1. Combine the dry ingredients, then why not go ahead and chuck the wet ingredients in the same bowl. Whisk until it’s the consistency of Willy Wonka’s chocolate river.
2. Add to whatever oven proof container fits in your air fryer (lined with baking paper), then bake at 180c for 30ish minutes or until a toothpick comes out clean. Leave to cool.
3. For the ganache, add 120g chopped chocolate to a heatproof bowl (I used half milk and half dark).
4. Pour 170ml double cream in a saucepan & tsp of caster sugar and heat up gently until the sugar melts and the cream is warm. Add to your chocolate and whisk until the chocolate is melted, smooth & glossy.
5. Either slice the brownie cake concoction up and slather the ganache between each slice, or use the ganache as a dip. Whatever tickles your fancy.
* Friendly warning, if you try to bake this in an oven, it’ll likely turn out to be a moist (sorry) chocolate cake. Triple the ingredients and divide the mixture into three cake tins for a lovely 3 tiered cake.
