I revised my rib method to 2/1/.5 (2 hr smoke / 1 hr wrap / 30 min glaze). They came out extremely well. The 3/2/1 rib method was definitely resulting in overdone meat.

    Those look great!!! And I am glad you put your timeline on there too. I am at 3 and just wrapped and when I was looking at them I suspected I could have done earlier
