Potatoes
Sour Cream
Salt and Pepper
Cheddar Cheese
Scalions
Butter
Bacon
Wash and dry your potatoes
Poke a few shallow holes in them
Wrap in foil
Bake until entirely cooked
Chop the green onions ( 1/2 cup
Grate the cheese -16oz
Melt some bacon fat in a pan –
(This lets the first pieces fry better)
Cook the bacon until crispy
Let dry on a paper towel
Chop or crumble it
Unwrap the potatoes
Cut them open. Make one side larger than the other
Scoop out most of the potato
Leave about a quarter inch to make a wall
Add butter and start to mash it
Add salt and pepper
Scoop in some sour cream 2 Tbs
Stir in about half the cheese
Then about half the scalions
Then stir in about half the bacon
Spoon the mixture into the hollowed out potatoes
Put the rest of the cheese on the top
Then it goes back in the oven
Remove once the cheese is nicely melted
Top with some sour cream, scalions and bacon bits
