For anyone curious!
Binder was “W Sauce”
Seasoning was “Dirt” seasoning.
Cooked overnight at 200 degrees. When I woke up I bumped the temp to 225, then wrapped at 176 degrees.
After wrapping I bumped the temp to 250 until the brisket was 203 degrees.
