In this video, we show you how to make Turkish bulgur pilaf with tomatoes, also called domatesli bulgur pilavi in Turkish. It’s a simple, healthy, and delicious side dish made with coarse bulgur wheat, tomatoes, and peppers.

👉 Make sure to use coarse bulgur, not fine bulgur. Fine bulgur is not for pilaf, it won’t give you the right texture. Look for coarse bulgur in Turkish or Middle Eastern stores.
This bulgur pilaf is a great and healthier alternative to rice. It’s easy to make, full of flavor, and goes well with almost any meal!

INGREDIENTS
2 tablespoon olive oil
1 medium onion finely chopped
¼ cup green pepper chopped
½ cup tomatoes diced
1 tablespoon tomato paste
1 teaspoon salt
1 teaspoon dried mint
½ teaspoon black pepper
1 cup coarse bulgur
1 and ½ cups hot water
Optional topping:
½ cup cooked green lentils
2 tablespoons parsley chopped

INSTRUCTIONS
Heat olive oil in a pan. Cook chopped onion and pepper together until soft.
Add in chopped tomatoes and cook for 2-3 minutes, stirring occasionally.
Add in tomato paste, black pepper, dried mint, salt and coarse bulgur. Cook for 2 minutes, stirring occasionally.
Pour hot water over these. Bring it to a boil.
Reduce the heat to the lowest and cook it covered for 15 minutes or until the water is absorbed.
Remove from heat and let it rest for at least 15 min. before serving.
Top with green lentils and parsley when serving.
