Hi guys!

Grilling is my favorite way to cook in the summer — it’s quick, there’s minimal clean up, and everything tastes so good. Today I’m making one of our go-to dinners: grilled chicken, asparagus, and a farro salad with a simple lemon vinaigrette. My whole family loves this recipe! It’s healthy, easy to make, and perfect for meal prep or a weeknight dinner.

Recipes below:

Grilled Chicken Marinade:
¼ cup olive oil
¼ cup lemon juice
1 tsp oregano
¼ tsp chili powder
½ tsp salt
3 garlic cloves, minced
Pepper to taste
→ Marinate for 30 mins in the fridge

Asparagus:
Trim ends
Spray with avocado oil (I use Chosen Foods)
Salt + pepper
→ Grill 1–2 mins per side

Farro Salad:
1 cup cooked farro
1 can chickpeas
1 chopped cucumber
1 cup cherry tomatoes
1 small red onion, chopped

Lemon-Honey Vinaigrette:
Juice of 1 lemon
4 tbsp olive oil
1½ tbsp honey
1 tbsp white wine vinegar
1 tsp Italian seasoning
½ tsp garlic powder
¼ tsp salt
¼ tsp pepper
→ Whisk + toss with salad

Grill chicken: ~6 mins per side until cooked through

Serve it all together + enjoy!

  1. Wow that looks delicious!
    But I’ve never heard of farro before. Hopefully you will do another video about it please?
    The other thing is that if you add a wee bit of dry mustard (powder) into your vinaigrette it will help keep it from separating. If you add it bit more it will thicken it slightly. But it will not change the flavour of the vinaigrette, especially when used in small amounts.
