Been wanting to try this one for awhile excuse I ate from the mixing bowl it was late.

3 yolks about a tablespoon of white miso. Guanciale and a mix of Pecorino and Parmesan.

  1. Approved, the base seems solid and miso is a considerate addition (although it’s a bit redundant with he pecorino assuming the pecorino is good), the only thing that worries me is the guanciale, maybe It’s the angle or the lighting but looks weird, small and not caramelized enough
