This came out so amazing. 🌱🩷
1 package firm tofu, drained
2 tbsp soy sauce
1 tbsp Vegenaise
1 tbsp almond milk, or other non-dairy milk
1 heaping Tbsp nutritional yeast
½ tsp garlic powder
½ tsp ground black pepper
½ tsp turmeric, for color
¼ tsp onion powder
¼ tsp paprika
pinch of cumin
Salt to taste
Canola oil, for sautéing
1) Break up the drained tofu with your hands into small pieces in a medium bowl.
2) Add all the other ingredients to the tofu. Using a rubber spatula, mix everything thoroughly. Taste and adjust salt and seasonings as needed.
3) Heat canola oil in a skillet or rimmed pan.
4) Add the tofu mixture and cook until heated through.
Notes: For a firmer, browned scramble: cook longer to allow tofu to brown evenly. For a softer scramble: heat just until warmed through and serve immediately.
