Garlic Parmesan Butter Gnocchi (AKA My New Favorite Side Dish)

Ingredients:
8 cups water for boiling
1 lb gnocchi (refrigerated or shelf-stable)
3 TB butter
4 cloves garlic, minced
2 tsp fresh thyme (or other herbs such as rosemary, oregano, sage, etc.)
salt & black pepper, to your tastes
2 oz freshly grated parmesan cheese, more or less to your liking

Instructions:
1. Boil the Gnocchi: In a medium/large pot, bring 8 cups water to a rolling boil. Add the gnocchi, stirring to separate. Keep watching until the gnocchi rise to the top, stirring again to separate. Drain and set aside.
2. In a saute pan, melt 3 TB butter. Add the garlic and saute for a minute, then add the fresh herbs and saute another 30 seconds. Add the cooked gnocchi and toss well to coat. Continue cooking, stirring often, to form crusty bits on the gnocchi.
3. Add salt and pepper to your liking, stir and taste, and adjust as needed.
4. Pour into a serving dish and top with freshly grated parmesan cheese.

Plenty of room for customization in this recipe:
• Try a flavored gnocchi – look for fun flavors and colors such as spinach, sun-dried tomatoes, herbed, spicy, etc. Maybe even some filled gnocchi!
• Experiments with different herbs and seasonings. Add some red pepper flakes for a zing.
• Try different cheeses.
