Well…super happy with how these turned out.
Keg steak spice and let sit for 48hrs.
Cooked at 225⁰ until internal was 120⁰
Removed, let rest (tented and a pat of butter on top) while smoker heated up to 500⁰
Back on the grill for a bit of a search getting internal to 135⁰.
So damn good, and everyone loved them.
