
Love just tossing these together after a long day of work and coaching. So versatile and great for "using up" fridge items.
This specific one:
9 large eggs, some heavy cream, shredded cheeses left from another meal, plenty of cooked butcher cut bacon left from a few days ago, thin sliced jalapenos from another meal, and finely diced onions from yet another meal. There are less than 10 carbs in this entire dish and it's at least 4 meals. Well, maybe 2 for me. It might look a little dark/burnt, but it's far from it.

I used to make little egg bakes in muffin tins and have them for breakfast (when I ate breakfast). So easy and so tasty.
This is a really good go to when I’m not sure what to eat for brunch and I’ve got bits in the fridge. I may do one tomorrow if I’ve got a chance! I call it crustless quiche 😝 (if you’re in the USA I don’t know if you call it quiche).
This looks delicious! So…do you bake at 350 degrees F for 20-30 minutes? I suppose that depends on how many eggs you use…I’m just looking for a general estimate. Or do you bake it until the center is no longer “jiggly?” Can’t wait to try this.
