My Tomato Tortellini Soup is the ultimate cozy comfort—cheese-stuffed tortellini simmered in a rich, creamy tomato broth infused with garlic, herbs, and parmesan. It comes together in one pot with minimal prep and pantry staples, all in 30 minutes or less. It’s a warm hug in a bowl!
Tomato tortillini soup made in just 30 minutes. You have to keep watching to find out my secret ingredient. Saute the onion and some butter. Toss in garlic and tomato paste. Then all the tomato products and liquids. Crushed tomatoes, tomato sauce, tomato soup, veggie broth and cream. Then rosemary, chili flakes, and Italian seasoning. Hit it with an immersion blender so it’s nice and smooth. Then add in the cheese torillini. Finish it off with parmesan. And then my secret ingredient, balsamic vinegar to enhance the flavors and balance out the soup. Garnish and serve with fresh basil, more parmesan, maybe some croutons. Dunk grilled cheese in there. Really, whatever you like. See the caption for recipe details and follow me for more.
