(Half eaten!) Protein Cheesecake I made because I had left over eggs!
I was so excited I forgot to take a picture before tasting it and sharing half of it with my partner.
I freestyled it and it came out really airy and light, with hints of lemon and the dark notes from the chocolate. Next time I'll try adding raspberries I think. (the texture is from the quark and not because it is crumbly or doughy like normal cake! There are no crumbs, the texture is like a airy and soft cheesecake!)
This is half the cake (when I say whole cake I mean this half + the already eaten half combined).
Since I don't have the exact measurments (just put in what felt right) I tried to estimate the calories. I overestimated on purpose (by like 50-100cals to have room for mistakes) and got 1450cal for the whole cake (120gr of Protein only counting the quark, eggs and chocolate).
Without the chocolate it would be just about 1000cal for the whole cake (80gr of Protein only counting the quark and eggs).
If you switch out or leave out the sugar it would be around 850calories for the whole cake.
I added roughly:
3 eggs (size M)
500gr of low fat quark (Magerquark, Topfen)
~10gr vanilla pudding powder
~50gr flour (more likely less than that)
~pinch of baking powder
~50gr of sugar (more likely less tgan that)
1pack of vanilla sugar
Lemon zest
A bit of lemon juice
Vanilla extract
Pinch of salt
A really tiny sip of Kefir (had it open and thought why not)
~70gr dark chocolate (optional but I would recommend to add something else e.g. raspberries)
I seperated the eggs and beat the eggwhites stiff with the salt and put it aside. Then I combined the sugars, vanilla extract and egg yolkes to beat them creamy. Afterwards I added the dry ingredients and after beating them I mixed everything with the rest of the wet ingredients (minus the eggwhites). Last step is to fold in the whites and put everything in your cake form (standard size glas dish but you don't need one made of glas). I lined mine with baking sheet so I don't need to butter the form.
I preheated the oven to 180C (upper under heat) and put some water on a baking tray on which I then put the cake.
I winged the time but it took over 30 minutes but under 1h.

The edges look like this because we didn’t cut it but used a fork to get our pieces. And reddit messed up the spacing of my original post 🙁
