Tried this sauce on a recommendation from a user here, but I can't get into it. There's a strange funkiness — maybe fermentation flavor, or an odd garlic, that's throwing the taste off. It's also crazy salty.

So far I've tried:

  • the original: doesn't taste the same as it used to, not as clean or bright, not as spicy as I remember

  • Underwood: good but still missing something

  • Melinda's: not as spicy as I'd like, still doesn't the brightness that the OG used to have

Open to suggestions where to go from here!

    You could try Badia, tastes pretty good to me. Or Yellowbird blue agave sriracha. It’s a little sweeter than the original Huy Fong, but it’s good. I definitely don’t recommend the Texas Pete one, it isn’t “bad” but there isn’t a hint of heat to it.

    The Tabasco one is pretty good, although a little sweet. I found a really good one at an import store made by Cholimex, called Tuong Ot. Spicy as fuck, too.

    i don’t like the flavor of sriracha on its own. it has to compliment a dish. putting a good quantity in your pasta sauce levels it up tremendously

    Shark brand Sriracha! It’s not quite the same sauce, but it has the most addictive flavor imo.

    I’ll admit this brand isn’t the best, but what I do like about them is the crazy range in varieties they offer. So far I’ve tried Black Pepper, Yuzu, Sichuan Mala, Tikka, Smokey, and Long Coriander.

    They also have Mustard, Kimchi, Mint, Coconut, Black Chili, Kaffir Lime Leaf, Tom Yum, Galangal, Lemongrass, Ginger, Soju, Hemp (lol), and more.

    Doesn’t hurt that it’s also quite cheap and readily available in my city,

    Flavor and heat, non grocery store sauces, are the way to go.

    Marie Sharp Belizean Heat

    Matouks Hot Pepper Sauce (Salsa Picante, Calypso, Trinidad Scorpion, try a variety pack maybe, I like them all but Picante Salsa is fav and it’s tasty and hot)

    Bunsters Shit the Bed, 10/10 or 12/10 sauces are great. From Australia, very flavorful and hot.

  13. I know what authentic Thai sriracha is like, it doesn’t work as an all purpose ketchup replacement that I became familiar with 30 years ago in pho shops.

    Hoy Fong is still fine, though different. Their former pepper supplier, Underwood Ranch, offers a better product now.

    American style sriracha isn’t rocket science, its just ripe jalapeño, sugar, salt, vinegar, and garlic. Assuming the balance is in order, its mainly the quality of the peppers that matters, and Underwood owns the farm. Pretty much concur with this:

    I realize this is no help, but the best Sriracha I’ve ever tasted is the one I make at home.

    I lacto-ferment serranos, Thai bird’s eye, and jalapeños together with garlic for 30 to 40 days. Make sure all the peppers you use are deep red. The long fermentation brings out a complexity of flavors that I just can’t get in store-bought Sriracha.

    I switched to the kikloman after huy fung had their issue with the supplier. It’s a bit sweeter, but has a really solid flavor profile and texture, it’s perfect for everyday use

    Sky valley sriracha is the BEST sriracha. I’m pretty sure you can find it online

    There’s an Asian market chain in my area called Hong Phat that sells a brand called Chilica and it’s really good. I haven’t been able to find it anywhere else locally.

    If you have a Giant store in your area, Nature’s Promise is their brand and it’s pretty good.
