This is my fat-loss meal prep! I’m keeping it high-protein with easy Mexican recipes that I actually enjoy. It only took one and a half hours!
Green enchiladas are one of my favorites. I love making them ahead of time! Whenever I’m hungry, I just pop them in the air fryer with the sauce, and seven minutes later, they’re good to go.
I pack the spinach separately so it stays fresh and doesn’t get soggy with the chicken salad. Fingers crossed the grapefruit holds up, this prep is meant to last me three days!

Here are the recipes:
Chicken Salad: Shredded cooked chicken, frozen carrots/peas/corn (thawed), fresh spinach, light mayo, salt and pepper. Just mix! I keep the spinach separate so it doesn’t get soggy.
Bistec: Cook a few tomatoes in a pan and set aside. Sear the steak, then remove it. In the same pan, cook diced onion, tomato, and serrano peppers. Blend 2 boiled tomatoes with chicken broth, garlic, 1/4 onion, 2 serranos, salt and pepper. Add the blend to the pan, simmer until soft, then add potatoes. Cover and steam until done.
Green Enchiladas: Boil tomatillos and serrano peppers for 12–15 mins, blend with onion, cilantro, salt, pepper, and chicken broth. Assemble enchiladas with shredded chicken and cheese. When ready to eat, pour sauce on top and pop them in the air fryer!
