Rice Paper Spanakopita Spiral!

My sister has always been obsessed with Spanakopita, now that she lives in Thailand we don’t see each other as much anymore.

She recently came back for a visit and was on a hunt for great Spanakopita, which inspired me to try this East meets West version using rice paper instead of Phyllo dough. WOW! It worked so well, it was so easy to make, the crunch was insane, and I just love the look of that perfect pillowy spiral.

This one’s for you Tal!

Ingredients:
3 rice paper sheets
2 eggs
1/2 cup shredded roast chicken
1/2 cup sautéed spinach
1/2 cup shredded mozzarella
1/2 cup crumbled feta
Sesame seeds
Salt and pepper
Lemon

Instructions:

Start by combining your filling: fold together chicken, spinach, mozzarella, feta and season with salt and pepper.

Whisk together eggs on a plate, then dip each rice paper sheet for a few seconds before laying out of a lightly oiled cutting board.

Spoon the filling in a line across the rice paper sheets and roll up into a tight cylinder, then gently curve it around itself into a company spiral.

Brush with a bit of the egg wash and top with sesame seeds.

Bake at 400F for 15-20 minutes until golden brown. Serve with lemon wedges. Enjoy!

When we were kids, my sister was absolutely obsessed with spanikapita. She literally used to eat it every single day. She’s lived in Thailand for the last 12 years, so we don’t see each other as much, but she recently came back for a visit, and all she wanted to eat was spanikapita.
