Tried to make onion soup based on a YouTube short. That white thing used to be milk.

    Usually when dairy curdles it’s because the temperature is too high, or there is too much acid. In this case I’m guessing it’s the former. Do your hard boil before you add the milk, then reduce to a simmer and remember to stir occasionally once the milk is added

    Milk..? In an onion soup? Buddy you need caramelized onions (and a lot of them), brandy/whisky/wine, stock and spices. Cheese and croutons to serve, chives if you’re fancy. That’s it

    If you put milk in hot liquid it’ll curdle instantly but heavy cream won’t

    I too watched that short about the milk onion soup. The YouTuber is cooking through history (I think?) his name is Max and he cooks authentic historical foods, pretty interesting!
