    ▢ 3/4 fine cornmeal

    ▢ 1/3 cup + 3 Tbsp gluten free all purpose flour

    ▢ 1/4 cup organic sugar

    ▢ 1 1/4 tsp salt

    ▢ 1/2 tsp baking powder

    ▢ 1/2 tsp baking soda

    ▢ 5 Tbsp neutral oil or melted dairy free butter

    ▢ 3/4 cup dairy free sour cream

    ▢ 1 flax egg

    ▢ 1/4 cup plant based milk

    ▢ 1/2 cup sweet corn

    ▢ 1/3 cup pickled jalapeños, roughly chopped

    Instructions:

    1. Preheat oven to 400F. Lightly grease a muffin tray.

    2. In a mixing bowl, add cornmeal, flour, sugar, salt, and baking powder + soda. Whisk together.

    3. Then add oil, milk, egg, and sour cream. Using a spatula, mix to combine.

    4. Add sweet corn and jalapeños then fold in. Scoop into muffin tray (tip for better shaping, scoop every other one).

    5. Bake for 15-20 minutes or until golden brown. Remove and let cool before serving.
