Messed with airflow a bit. I assume also may have had middle ribs too close to temp probe in back and wasn’t getting a true temp reading some of the time. 3hrs on smoke boost and another 3 at 240-ish to get to around 190 deg when the crowd started to grab their pitchforks and a noose.

My Searwood gets delivered this weekend, went XL but probably could’ve gotten away with the standard after seeing this!
Can you use all the accessories on the smaller 600? Like rotisserie and pizza stone?
Then you can get a rib rack and for 9 racks
Did the ribs cook evenly? Especially the ones on the top rack.
I have the 600 as well and im trying to think of ways i can maximize the space for a large group.
