





I took a great risk and decided I should try/cook a Wagyu steak before I keel over. Went more on the rare side of medium rare to keep it clean and seasoned with just salt and pepper. Preheated my cast iron in the oven to 400 degrees, cut off a bit of the fat and after the pan was heated, used that fat to coat the pan while placing it on a high heat burner. Seared all the edges so the fat could render out, then 3 minutes on one side, little over 2 on the other (basting with the beautifully rendered fat). Let it rest in a warm oven for 10 minutes. Pretty fuckin amazing to be honest. Juicy, succulent, full of meaty goodness. Great crisp sear outside and like butter inside. Shocked and excited I pulled it off. Happy to have tried it once in my lifetime. 😁

Haha, sounds like you were white-knuckling it through the cook but it looks like MAXIMUM EFFORT paid off! I feel like I could pay in the triple digits at a ton of restaurants and they wouldn’t be half as good as this looks.
