Today, I’m excited to share with you a unique twist on the classic falafel— but made with something else other than chickpeas.

This recipe is not only delicious but also vegan and gluten-free, making it perfect for anyone looking for a healthy and satisfying meal.

Full written recipe:

Ingredients:

1 cup of dried red lentils
1 small onion, chopped
3 cloves of garlic, chopped
1 green chili, chopped
12 grams of fresh parsley
12 grams of fresh mint
1 teaspoon of ground coriander seeds
1 teaspoon of ground cumin
1 teaspoon of paprika
1/4 teaspoon of black pepper
1 teaspoon of fine salt
1/4 teaspoon of baking soda
Vegetable oil (for pan-frying the falafels)

Instructions:

1. Soak red lentils for 3 hours, then wash and drain thoroughly.
2. Pulse lentils in a food processor until grainy. Set aside in a bowl.
3. Pulse onion, garlic, green chili, parsley, and mint into a thick green mixture. Add to lentils.
4. Mix in spices, salt, and baking soda with your hands until you get a light, well-combined falafel mixture.
5. Cover and refrigerate for 30-45 minutes to firm up.
6. Heat 1/4 inch of oil in a large skillet over medium heat.
7. Shape falafels with the help of two tablespoons and fry for 3-4 minutes per side until golden brown. Remove with a spatula onto paper towels.
8. Repeat with the remaining mixture, adding oil as needed.
9.Serve hot alongside tahini sauce, pita bread, or on top of a salad, for example.

After rinsing and then soaking the red lentils for 3 hours… Simply discard all the water Then place the lentils in the food processor And pulse for around 10-12 seconds Don’t do it for too long, try to preserve some texture Transfer the lentil mix to a bowl And set aside while we work on the other ingredients 1 onion, roughly chopped 3 garlic cloves, sliced in half 1 green chili, chopped (no seeds) 12 grams of parsley 12 grams of mint Pulse everything to bits Transfer the now green mixture to the same bowl
as the lentils And then we’ll start adding the flavors 1 tsp of ground coriander seeds 1 tsp of ground cumin 1 tsp of paprika 1 tsp of salt 1/2 tsp of black pepper 1/2 tsp of sodium bicarbonate Then use your hands to mix everything together Leave the mixture in the fridge for 45 minutes Using two spoons, I shaped the mixtu And placed it on a hot, oil-covered pan on medium heat Leave them for 4 minutes before flipping Here I’m using a spoon and a fork to flip them But use whatever is more comfortable for you Pan-fry the other side for another 4 minutes
(or until you see it’s properly fried) Then fish the falafel out of the frying pan Placing the falafels in a plate lined with paper towels When serving the falafel, you can accompany it
