    Ingredients

    – Sweet potatoes
    – Protein powder (Vedge Nutrition is my new go-to brand)
    – PB2 powdered peanut butter (or any peanut powder)
    – Water (or milk/yogurt for mixing)
    – Cinnamon

    Instructions

    – Rinse and scrub your sweet potatoes (I used around 500g) clean. Pierce them with a fork to prevent explosions in the microwave. If they’re large, cut them in half to cook faster.

    – Place them in the microwave for about 3 minutes, then flip them over and cook for another 2 minutes or until a fork goes in easily.

    – In a bowl, mix 70g of protein powder with 35g of PB2 peanut powder and 75g of unsweetened coconut milk yogurt. Add water and stir until it reaches a pudding-like consistency.

    – Slice open the cooked sweet potatoes and scoop out some of the flesh, saving it to mix back in later. Fill the sweet potatoes with the protein peanut butter mixture.

    – Sprinkle some cinnamon on top. If you want the filling warm, microwave the stuffed sweet potatoes for another 45-60 seconds.
