FATTOUSH — Middle Eastern Salad with a Zesty Twist!
A colorful salad that brings the flavors of home, now with a herby za’atar dressing and that classic pita crunch!

You’ll need:
• 1 handful parsley, chopped
• 1 handful mint leaves, chopped
• 2 tomatoes, diced
• 1 cucumber, diced
• 1 cup red cabbage, shredded
• 1 small Spanish onion, thinly sliced
• 1 spring onion, sliced
• 4–5 radishes, thinly sliced
• 2 cups lettuce, roughly chopped
• 1–2 pieces of pita bread (fried or oven-baked till golden + crispy)
Dressing:
• Juice of 1 lemon
• 1 tbsp pomegranate molasses
• 1 garlic clove, crushed
• 1 tsp za’atar (instead of sumac!)
• 3 tbsp 100% pure olive oil
• Salt to taste
Method:
• Fry or oven-bake your pita bread until golden and crispy. Let cool.
• In a large bowl, toss together parsley, mint, tomato, cucumber, cabbage, onions, spring onion, radish, and lettuce.
• Whisk all the dressing ingredients together until fully combined.
• Pour the dressing over the salad and toss gently to coat.
• Just before serving, break the crispy pita into pieces and toss it in for that iconic crunch.

One thing I love about Middle Eastern food is the sustainability that it has. I’m using the leftover style bread that I have at home. I’m frying it up nice and crisp to make a beautiful bowl of fat. What you think is going to be a simple salad turns out to be something so spectacular by the time you are done with this. Fatosh is something that we have in our homes at least once every couple of weeks. As Arabs, we love our herbs and our veggies and we have so much vegan variations of foods as well. something a lot of people didn’t know about the Middle Eastern cuisine. Now, I like to add a little spin to my fat douch. Instead of using sumac in my dressing with a beautiful pomegranate, molasses, and olive oil, I love to add zatar in there cuz I find those sesame seeds just add another level of flavor. Put the crispy Peter bread straight on top and get ready to enjoy a bowl full of goodness.
