Frittata is 1450cal (8 servings, 180cal/ea)
– 1 yellow onion sliced or chopped (130g)
– 100g chopped frozen spinach
– 2 potatoes sliced or chopped (325g)
– 1tbsp vegetable oil
– 6 eggs
– 90ml coconut milk
– 50g parmesan
– salt, pepper, cumin, coriander, paprika, dry parsley to taste

Cook onion and spinach in a pan.
Cook potato in another pan.
When potatoes are ready, dump your spinach+onion in there.
Beat the egg and add your milk, cheese and spices. Add that in the pan too.
Cook on low until done.

Sorry about the presentation, I was so excited to eat I rushed plating it. I had two slices of the frittata, so one is not pictured here, the photo is misleading because that plate is huge and I am so full now.
