I melted some mozzarella cheese on sliced strawberries, and I am amazed how good this tastes. One day I would like to make a pie with a thin layer of strawberry filling on the bottom and a thick layer of mozzarella cheese on top.

Actually – I make something like this as a summer salad often, and it is usually super well received! Make a caprese, but halve the amount of tomato and sub strawberries instead. In fact, sometimes I omit the tomato all together. The fresh Mozz, basil, and balsamic with the sweet strawberries tastes so refreshing and unexpected!!
