It is the refrigeration over night that lets you slice nice and thin.
Only thing I’d add is to wrap it tightly in saran wrap, with enough overhang that you can twist it up and tighten the saran such that it forms and holds the roast in shape, then into the fridge.
And my favourite: two slices of good bread, mayo on both.(I add a titch of horseradish to the mayo), spinach leaves not lettuce, pile on the shaved roast beef and top with either a slice of or crumbles of blue cheese. Yum. Only trouble with this sammie is you need a beer to help wash the taste of the blue cheese out of your mouth.
Do you chill it before slicing?
After I bought my first smoker, I couldn’t resist buying a deli slicer and chamber sealer to go with it. Home-smoked roast beef and turkey is so superior to store-bought. Same with smoked cheese.
Got a pair of these in the deep freeze that I’ve been saving to do jerky with, but looks like i’m making roast beef this weekend. Thanks for the idea, looks great!
