Question is basically in the title lol. The other night I made a Reese's type of bar with peanut butter and almond flour for the base, dark chocolate hardened on top. What are some other ideas? Was thinking a cannoli dip, but then what to dip in it?

    I enjoy almond flour mug cakes with cream and sugar free chocolate chips. Cottage cheese cake is another. I also make ice cream cookies by baking an almond flour crust in mini pie cases and whipping up some cream and sugar free jelly dissolved in half the amount of water and freeze them. Also made a good coconut custard pie using egg yolks to thicken the coconut milk and again on an almond flour base. I just add guar gum to the almond flour and use sweetener, butter and a little almond milk if needed. Bake them till they’re done and just use them for whatever. Sometimes I make bars and top them with cream cheese and a little melted sugar free chocolate and sweetener. I’m diabetic so not completely Keto but low carb and I find I can enjoy a bit of fruit. I really want to make a few small peach crumbles because it’s winter where I am. Just to have some warm comfort food.

    I am not sure what GF means (Gluten free?), but take any tiramisu recipe you find and instead of sugar add your keto friendly sweetener. You can omit lady fingers, they add nothing in my opinion.

    Take one avocado and mash it with 2 eggs and 1 cup of sugar replacement (whatever sweetener of choice would replace a cup of sugar). Make it smooth then add 1/3 cup Dutch process cocoa and 60 grams unflavored protein powder of choice. A splash of salt, a splash of vanilla, 1/4 tsp baking powder and bake at 350 for 25-30 minutes. If you want you can replace the avocado with half cup of melted butter. And you have just made delicious keto brownies. With butter they’re very fudgy, with avocado they’re more cake like. Top with whatever you desire, chopped nuts work great.

    **Keto New York Cheesecake w/ Pecan Crust**

    Prep Time: 20 min | Cook Time: 2 hr, 25 min | Total Time: 2 hr | Servings: 12

    Description:
    A classic dessert, minus all of the sugar

    Ingredients:
    Crust
    1 ½ cup pecan crumbs
    5 tablespoons unsalted butter, melted
    1 ½ tablespoon of allulose

    Filling
    2 ½ pounds Philadelphia Cream Cheese, cut into rough 1-inch chunks and softened
    1 ¾ cup of Allulose sugar substitute
    ⅛ teaspoon salt
    ⅓ cup sour cream
    2 teaspoons fresh lemon juice
    2 teaspoons vanilla extract
    2 large egg yolks at room temperature
    6 large eggs at room temperature
    1 tablespoon unsalted butter, melted

    Directions:
    Crust
    1. Preheat oven to 325. Grease a 9-inch springform pannwith butter.
    2. Grind pecans into fine dust with a food processor or blender.
    3. Add 3 tablespoons of melted butter and Allulose to a bowl with pecan crumbs and mix with a fork. Season with a pinch of salt if desired. Add more butter, as necessary.
    4. Press into bottom of pan uniformly using the bottom of a measuring cup.
    5. Bake on middle rack until fragrant and beginning to brown for 10-12 minutes. Let cool on a wire rack for 30 min.
    Filling
    1. While crust cools, increase oven temperature to 500. Beat the cresm cheese in a large bowl with an electric mixer on medium-low speed until softened, 2-3 minutes. Scrape down the side of the bowl and beaters.
    2. Beat in half the Allulose and salt until mixed, 2-3 minutes. Beat in the remaining Allulose until incorporated, 1-3 minutes. Beat in sour cream, lemon juice, and vanilla until incorporated, 1-3 minutes. Beat in egg yolks, 1-3 minutes. Beat in eggs, 2 at a time, until incorporated, scrsping down bowl and beaters as needed, 1-3 minutes.
    3. Without disturbing the crust, brush tge sides of the springform pan with melted butter. Place the pan on a rimmed baking sheet. Pour filling over crust and bake for 10 minutes.
    4. Without opening oven doir, reduce hest to 200 degrees and bake until instant-read thermometer inserted in center of cheesecake reads 150 degrees. This shoukd take about 90 minutes. Rotate pan halfway through, at 45 minute mark.
    5. Transfer pan to wire cooling rack and run a pairing knife between edge of cake and pan every hour or so. Repeat until cake is barrly warm, about 3 hours. Cover pan tightly with plastic wrap, and chill in refrigerator until cold, at least 3 hours.
