As a candy maker I’m not a big fan of the ‘boil for 15-20mins’ as there’s a ton of variables that could mess things up. Do you perhaps have the temperature when it’s needed to be taken off the burner. 240°- 250°F?

For those who don’t like coconut milk, you can make caramel with just sugar, water, and lemon juice, or you can use some plain vegan creamer.

?? Caramel has always been vegan. It’s just cooked sugar
